A small amount of liver provides well over 100% of the RDI for many essential nutrients. It is also rich in high-quality protein and low in calories, it is possibly the most nutrient-dense food. I love mutton liver rather than chicken liver . This recipe is from my mom who makes the perfect liger fry without adding too many masalas. Do try it as its very easy to make.
Ingredients
- 400 gms liver
- Haldi 1/2tsp
- 2 tsp pepper powder
- 1/2tsp garam masala powder
- Juice of 1/2 a lemon
- 2 tbsp ginger garlic paste
- Salt to taste
- 1 small onion chopped
- 2 tbsp ghee or oil
- Chopped coriander
Directions
- 1Liver has a thin white transparent shinny membrane on it. Always remove that membrane and then cut into small cubes. Sprinkle a little salt and turmeric powder on raw liver and leave it for 15 minutes. Then wash it thoroughly removing all blood veins
- 2Marinade the liver with all the above ingredients that is haldi , ginger garlic paste, lemon , pepper, garam masala and salt and set aside for 2 hrs.
- 3In a pan add 2 tbsp ghee or oil fry the onion chopped till light golden add the marinated liver , fry it for a couple of minutes add a little water if you want a thick gravy if not just cover and cook for 15mts. Keep stirring every 5 mts . Cook till all the water is absorbed . Finally garnish with chopped coriander. Serve hot.
