As a typical mangalorean i too have a habit of munching something along with tea as a evening snack. Back home in mangalore every house has a separate steel airtight container for all these snacks. But here i miss all those snacks but from a couple of years i have started making some of these snacks at home and the results where always good . Alhamdullillah. So thought of sharing some of them in my blog .
Coming back to todays snack spicy tukdi is a unique recipe than the most commonly found tukdi recipes on many sites. Hope you will try and leave a feed back
Ingredients
- All purpose Flour ( maida)2 cup
- Dry red chillies 4
- Ginger 2 inch pc
- Garlic cloves 8 small
- Salt to taste 1tsp
- Black sesame seeds-(til) 2 tsp Oil-for deep frying
- Cumin seeds(zeera) 1/4tsp
- Bishop's weed (Ajwain) 1/4tsp
- Ghee 2 tsp
- oil for deep frying
Directions
- 1In a blender add red chilly, garlic and ginger
blend it until smooth paste with a little water.
In a large bowl, add flour, blended paste, cumin ,sesame and Ajwain seeds, melted ghee and salt Crumble it well.
Add enough water and make a soft dough.
Cover and Keep it aside for 20 mts . - 2divide the dough into 4 balls.
Roll each ball into a thin roti on a rolling pin
Now cut the rolled sheets into long strips lengthwise. And then again cutting into breath wise into small diamond shapes by using a sharp knife or a pizza cutter.
Heat a pan with oil and fry the diamond cuts on medium flame until nice golden and crisp.
To drain the excess oil remove it on a tissue paper.
After it cools down completely store them in an air-tight container .
