Ingredients
- Mash
- 1 large head cauliflower
- 1 Tbsp butter
- 1/2 c milk
- 2 tsp paprika
- Filling
- 1 Tbsp butter
- 1/2 onion, chopped
- 2 medium carrots, peeled and chopped
- 1/2 large head broccoli, chopped
- 800 g lean mince
- 1/4 c beef broth
- 1 can diced tomatoes
- 1 1/2 Tbsp tomato puree
- 1 tsp cayenne pepper
- 2 tsp ground cumin
- salt to taste
- pepper to taste
- 1 c grated mozzarella cheese
Directions
- 1Put the cauliflower into a steamer. Preheat oven to 200'C / 400'F
- 2While the cauliflower steams, add the butter to a large pan over medium low heat. Add the onions to the pan and stir for about a minute before adding the carrots and broccoli. Cook this, stirring constantly for 5 minutes and then remove from heat and place into a bowl.
- 3Using the same pan, add your mince and brown it thoroughly. Once it looks like the meat is almost completely cooked, add in the cumin, cayenne, tomato puree as well as the can diced tomatoes.
- 4Add al the veggies back into the pan with the meat and let simmer on low while you prepare your mash.
- 5Remove the cooked cauliflower and add it to a blender along with the butter, milk, paprika, salt and pepper. Now just blend it all together.
- 6Place the filling into an oven-safe dish and add the mash on top. Sprinkle with the cheese and pop it under the grill for about 10 min, or until the cheese is melted and golden.
- 7Serve warm with a lovely salad. Enjoy!
