Sesame when mixed with groundnut, offers an exotic flavor. Brinjal smashes well with sesame and groundnut, and becomes a rich paste. It is an excellent side dish for biriyani, pulao and even plain rice.
Ingredients
- Brinjal - 250 gms
- Onion - 1 no
- Tomato - 1 no
- Curry leaves - to flavor
- Sesame seeds - 1.5 teaspoon
- Ground nut - 2 teaspoon
- Pepper - 1/2 teaspoon
- Tamarind juice - 2 tablespoon (thick juice)
- Turmeric powder - 1/4 teaspoon
- Chilli Powder - 1 teaspoon
- Oil - 2 tablespoon
- Salt - to taste
Directions
- 1Heat oil and add pepper, 1/2 teaspoon sesame seeds and curry leaves.
- 2After they pop up, add onion and fry till it turns golden brown.
- 3Now add tomato and allow it to cook, so that it gets smashed easily.
- 4It is time to add chopped brinjal (cut it lengthwise into 4 pieces) and allow it to get toasted for a minute.
- 5Add turmeric powder, chilli powder and tamarind juice. Grind the groundnut and 1 teaspoon of sesame seeds in to a fine paste. Add the paste to the curry and sprinkle some water.
- 6Let it cook for 5 minutes and the dish is ready to serve.
