Any pasta you like will suit this cheesy dish, quick and easy to make, delicious to eat 

Ingredients

  • For the chicken:
  • 2 skin-less chicken fillets (160 gr each)
  • 15 gr (1 tbsp) fresh chopped cilantro leaves
  • 15 gr (1 tbsp) fresh chopped parsley
  • 6 pieces pitted olives
  • 125 gr (½ cup) cream cheese
  • 2 tomatoes
  • 30 gr (1 tbsp) breadcrumbs
  • 60 ml (2 tbsp) olive oil
  • Salt and pepper to taste
  • For the sauce:
  • 250 gr (8 oz) tomatoes
  • 60 gr (2 tbsp) onion
  • 1 clove garlic
  • 5 gr (1 tsp) oregano
  • Olive oil
  • Salt and pepper to taste
  • For the pasta:
  • 175 gr (6 oz) dry pasta of your liking (spaghetti, fusilli, macaroni, tagliatelle)
  • 1ltr (2 pints) water
  • salt

Directions

  • 1Pre-heat an oven to 180 degrees Celsius (350 F)
  • 2Bring the pasta water with salt to a boil and cook the pasta according to the packing instructions, about ten minutes.
    Strain the pasta through a sieve, rinse and mix with a tsp oil to avoid sticking
  • 3Using a sharp knife, make incisions on the thick side of the chicken fillets to create pockets
  • 4Cut 4 slices from the tomato. Chop the remaining tomato, cilantro, parsley and olives fine.
    Combine the cheese with the olives, chopped tomatoes and herbs, season if needed
    Spoon the cheese mix in the pockets of the fillets and secure with a toothpick
  • 5Heat the olive oil in a skillet to medium heat and fry the fillets until browned on both sides 2 to 3 minutes
    Transfer to a baking tray, place the tomato slices on top followed by the breadcrumbs and finish baking in the oven for 10 to 12 minutes
    Remove from the oven, cover with aluminum foil and keep warm
  • 6Peel the onions, garlic and cut small, do the same with the tomatoes
    Heat a tbsp of olive oil in the sauce pan on medium heat, add the onion and fry for 30 seconds. Add the tomatoes, oregano and 3 tbsp water, lower the heat and simmer 5 minutes
    Transfer the mix to an up-right blender and blend smooth. Return to the pan and season with salt and pepper
  • 7Add the pasta to the frying pan the chicken is fried in. Add the tomato sauce and combine on medium heat.
  • 8Divide the pasta over plates, slice the chicken breast in half and place on top of the pasta
    Serve hot
