Pilaf rice is rice cooked in a seasoned broth and a staple in many countries around the world. The mushrooms and juicy cherry tomatoes make this a very tasty vegetarian version. The peanuts give that little crunch with every bite. If you are allergic to peanuts replace them with nuts you are ok with or simply sprinkle some fried onions on top. Easy to make and a delight to savor, 

Ingredients

  • 1 tsp turmeric powder (or a few strands of saffron)
  • 4 cups vegetable broth
  • 4 tbsp olive oil
  • 16 Shi-Take Mushrooms
  • 16 Grissini Mushrooms
  • 1 large onion (cut into wedges)
  • 4 cloves garlic (minced)
  • 16 Cherry tomatoes (halved)
  • 3 oz canned or frozen peas
  • 1 tsp ground oregano
  • 2 tbsp basil leaves (chopped)
  • 2 tbsp chopped roasted raw peanuts
  • Sea salt

Directions

  • 1Heat the olive oil in a deep skillet or stockpot on medium heat.
  • 2Add the onions and garlic and turmeric powder (or saffron). Fry on low heat until the onions have softened. 3 to 4 minutes.
  • 3Add the mushrooms and peas if you use frozen peas, add canned peas later if used.
  • 4Mix well; add the washed rice and fry for a minute; ensure the rice kernels are well coated with the oil. Add some salt to season
  • 5Add the vegetable broth close the pan with a lit, lower the heat and cook on low heat for 20 to 25 minute, until all the broth has been absorbed.
  • 6When the pilaf has absorbed all the liquid, the rice is cooked, add canned peas (if used) at this point of time, plus the cherry tomatoes and mix through.
  • 7Serve the Pilaf on individual plates, topped with the roasted peanuts
