Kaygana is a Turkish omelette or rather let’s call it Turkish crepes, is a recipe you can add to your breakfast idea list. Easy, protein rich and refreshing! If you are a  crepe person you’ve got to try this! You can stir up the batter previous night and pan fry it for breakfast. Interestingly it is kid’s lunchbox friendly too. Serve it along with some feta or cheese dip, or hummus, muhammara… the list is open for endless ideas. I tried it last with muhammara and we just loved it! It can also be served as a part of mezze platter for lunch or dinner along with an assortment of salads and kababs.

1. In a mixing bowl, add the eggs and milk. Whisk well.

2. To this mixture toss in the flour and whisk well.

3. Add the remaining ingredients( black pepper, garlic powder, paprika, herbs salt cheese) to this mixture except olive oil. Mix well.

4. Heat a pan on medium and drop a tsp of Olive oil. Pour out 1/2 cup batter in the center little by little spreading out towards the sides like a crepe with a laddle. Allow to cook till sides lightly brown.

5. Turn the crepe over and allow to cook for a minute on low heat. Take the crepe out of the pan. Roll or fold in a triangle shape. Serve hot with dip of your choice.

Ingredients

  • All purpose flour- 80gm
  • Eggs- 4
  • Milk- 1cup
  • Dill and parsley leaves(chopped)- 1/3cup
  • Spring onions- 2
  • Black pepper powder- 1/4tsp
  • Paprika- 1/2tsp
  • Garlic powder- 1/2tsp(optional)
  • Salt to taste
  • Cheese(mix of cheddar, feta, mozzarella) or any one type- 100gms
  • Olive oil for cooking the crepe omelette.
