This recipe is inspired by a friend of mine she adds cashews to the avocado paste, i add spinach instead, am not really a pasta person but i love this recipe, i kept some in the fridge it still tasted good.Fresh basil is your friend with this dish, It tastes better with pasta noodles but i used what i had in the house at the time.
Ingredients
- 1 cup penne Pasta
- 1 ripe avocado
- 5 fresh basil leaves
- 1Tbsp olive oil, salt and pepper to taste
- (optional) 1/4 cup spinach or 1/4 cup chopped almonds
- cherry tomatos and thinly sliced red onion
- juice of 1/2 lemon
Directions
- 1boil pasta until soft and set aside
- 2while pasta is cooking add avocado,oil, basil, spinach or chopped almonds(optional) and lime juice blend in a food processor until smooth, add salt and pepper to taste
- 3in a mixing bowl, add tomatoes and onions, avocado paste and pasta.
mix and season as desired garnish and serve
