Ingredients
- FOR EGGPLANT
- 1/2 cup tomato sauce
- 3 medium tomatoes diced
- 1 red onion cut in rings
- 1 Red pepper cut in
- 2 cloves garlic minced
- 1 tsp paprika, 1 tsp Italian seasoning
- 2 Large eggplants diced
- olive oil, 1/2 tsp vinegar
- FOR LENTILS 1 cup cooked lentils, 1 tomato, 1 carrot, 1 small onion, 1 Tbsp oil 1 clove garlic, salt to taste
Directions
- 1Set oven to medium high
- 2sprinkle a casserole dish with oil then lay the eggplant evenly season with salt and pepper
spread tomato sauce over the eggplant then the tomatoes, onions,pepper, garlic, vinegar, herbs and sat to taste. sprinkle oil, cover with foil and bake 30 minutes - 3for the lentils
saute the veggies in oil and add the lentils and 1 cup water , cook on medium heat until tender.
season to taste - 4Green beans
boil in salted water for 5 minutes - 5serve the veggies with rice
