I like to use inexpensive ingredients that most of the time are already in your kitchen to make delicious vegan meals.

the secret to a good stir fry is the seasoning, once you get the seasoning right, you cant go wrong. i used dry herbs but you can use fresh herbs if you like


  • 2 cups cooked pasta
  • 1 small zucchini diced
  • 1 medium carrot chopped, 1/2 cup chopped green beans
  • 2 tomatoes blanched and chopped
  • 1 onion chopped
  • 1 sweet pepper chopped
  • 2 cloves garlic minced
  • 1/3 cup cooked chick peas (optional) you can add a protein of your choice
  • 1 tsp of dry basil, turmeric or curry powder,dry parsley
  • 1 Tbsp coconut oil
  • salt and pepper to taste


  • 1Heat oil in a large pan on medium high, add the carrots and cook for at least a minute, add onions garlic,turmeric cook for another minute
    Add tomatoes and green beans and cook until tender
    Add the herbs, salt, pepper to taste then add the remaining ingredients and stir fry on medium high for a minute the medium low for 2 minutes until everything is well combined
  • 2serve hot with a desired cheese topping and enjoy
