Ingredients
- 1 1/2 cup flour ( i used spelt)
- 2 mashed bananas, 3/4 cup coconut milk, 1/3 cup coconut oil, 1 Tbsp apple cider vinegar
- 1 Tsp baking soda, 1 tsp vanilla essence,1/4 tsp salt, 1 tsp lemon rind
- For icing frosting (optional)
- 1 avocado,1/2 cup icing sugar, 1 tsp vanilla essence, 2 Tbsp unsweetened cocoa, 1 Tbsp oil
Directions
- 1Heat oven to medium high
Grease the cupcake tray lightly with coconut oil
In a mixing bowl add all the wet ingredients then fold in all the dry ingredients and mix well for a smooth consistency, however, do not over beat
(optional) add chocolate to 1/3 of the mixture and spoon both mixtures as desired into the muffin
Fill the prepared cupcake tray with batter 3/4 full and bake for 15 minutes - 2while the cupcakes are baking beat the frosting ingredients in a mixing bowl to silk smooth consistency
after the cupcakes have fully cooled down, frost the cup cakes as disired
