Ingredients

  • Step 1 CRUST :
  • 1 cup flour
  • 1/4 cup olive oil, 1/2 cup water as needed
  • 1/2 tsp salt
  • 1/4 tsp baking soda
  • 1 tsp garic powder
  • Step 2 FILLING
  • 1 potato thinly cubed
  • 1 cup mixed fresh veggies
  • 1 cup chopped spinach
  • 1 large onion minced
  • 2 green onions
  • 1 green chill or scotch bonnet de-seeded and thinly diced
  • 2 Tbsp coconut oil
  • salt to taste

Directions

  • 1Heat oven to medium high
  • 2Crust: in a mixing bowl add flour, garlic,salt and oil, mix until it resembles crumbs and add water as needed to make a dough but don't over knead or the crust will be too hard.
    cover the dough and refrigerate for 30 minute
  • 3Filling: heat oil on medium high, add the cubed potatoes stir until potatoes turn golden brown, add the remaining ingredients stir fry for a minute or two on high, season with salt as needed, cover and cook on low until the vegetables are soft, roughly mash the veggies so they come together and set aside
  • 4Make pies: bring the crust on a floured surface and make 4 balls
    Roll into small disk shapes, spoon 2 tablespoons of the veggies on half side of the disk, and roll the other side over the veggies, close the pie by sealing with a fork and transfer on a lightly greased baking tray
    brush the pies with oil and bake until brown
