This is an Inspired Indian  recipe that i love , the chick pea flour in hot oil adds a crisp texture to the pumpkin while the spices and sugar give it a savory flavor.i use coconut oil but you can use any oil of your choice

 

Ingredients

  • 2 Cups cubed pumpkin
  • 1 onion chopped
  • 1 Tbsp coconut oil
  • 1 tsp crushed ginger 1 tsp turmeric powder 1 tsp sugar
  • 1/2 tsp chili powder, 1/2 tsp salt, 1/2 tsp corriander powder and 1/3 cup water
  • STEP 2. 1 Tbsp Coconut oil 2 Tbsp chick pea flour chopped cilantro to garnishing(optional)

Directions

  • 1Heat oil at medium high, in a non stick pan
    add the cumin seeds and let them pop about 30 seconds then add the onions,turmeric and crushed ginger, saute it until golden brown.Add pumpkin with the remaining ingredients except the flour and the remaining tbsp of oil, cook until tender about 10 minutes
    In a separate pan, heat the coconut oil then add the chick pea flour until dark brown
    Add the cooked pumpkin to the flour mixture and combine. cook uncovered for more 5 minutes to get a crisp texture
    garnish with chopped cilantro and serve hot, i used green onions instead

I'll try it. I don't like coriander. Do you think it works also without it?
