Ingredients
- 1 medium size onion
- 3 Tomatoes
- 1 Red bell pepper
- 1 Tbs lime or lemon juice
- 2 Cloves garlic
- 2 Tablespoons coconut oil
- Salt and peeper to taste
- 3 Chinese eggplants or any eggplant of our choice
Directions
- 1Chop all the ingredients in size bite or your preferred choice and set aside
- 2Heat oven to 220%C
- 3In a baking casserole dish, add all the ingredients, mix well and season to your taste, cover and
bake for 30 minutes
serve with boiled rice or pasta
