Ingredients

  • 1 medium size onion
  • 3 Tomatoes
  • 1 Red bell pepper
  • 1 Tbs lime or lemon juice
  • 2 Cloves garlic
  • 2 Tablespoons coconut oil
  • Salt and peeper to taste
  • 3 Chinese eggplants or any eggplant of our choice

Directions

  • 1Chop all the ingredients in size bite or your preferred choice and set aside
  • 2Heat oven to 220%C
  • 3In a baking casserole dish, add all the ingredients, mix well and season to your taste, cover and
    bake for 30 minutes
    serve with boiled rice or pasta
