I came up with this recipe while going through a diet strict in the past; i substitute spelt flour for wheat flour, yeast for a combination of baking powder and soda and i use homemade tomato sauce instead of store bought
This pizza tests amazing you should try it
N.b you can add cheese to your topping if you choose to
Ingredients
- 1 cup spelt flour, 1/2 tsp baking powder, 1/4 tsp baking soda, 1/2 tsp salt, 2Tbsp oil, 1/4 cup warm water
- 1/2 cup sliced zucchini
- 1/2 cup red and green bell peppers, diced
- 1 small red onion diced
- 1 tomato sliced
- 1/2 tsp dry oregano, basil, 1 tsp paprika (optional)
- 2-3 Tbsp tomato sauce
- 1 Tbsp olive oil
Directions
- 1Add all the dry ingredients in step one to make a smooth elastic dough, if its too dry add a little water and if its too soft add flour, knead until smooth and set aside for half an hour
- 2Heat the oven to 250C
- 3After 30 minutes on a floured surface, knead the dough into a disc shape and bring to your baking tray
spread the tomato sauce evenly sparing the edges, then start adding the toppings according to your like then the dry herbs and drizzle the olive oil on top of the vegetables,bake for 15 minutes or more depending on your oven
