Ingredients

  • BANKU
  • 1½ cups of corn dough
  • 2 cups of cassava dough
  • 1 tsp salt for taste
  • FRIED FISH
  • 4 fresh fish of your choice
  • 1 shrimp maggi cube
  • 1 tsp salt
  • 1 tbsp ginger garlic paste
  • Oil for frying
  • FRESH PEPPER
  • 2 scotch bonnet Pepper
  • 1 large tomato
  • ½ onion
  • Salt for the taste

Directions

  • 1BANKU: Now with clean hands, mix the corn dough and cassava dough together with water in a large saucepan Mix until it turns into a watery paste. Add the salt.
  • 2Using a banku stick or a thick wooden spatula, stir continuously till it begins to thicken.Keep stirring to prevent the mixture from turning into lumps. We have a special wooden stick to make the banku you can easily a thick wooden spatula.
  • 3The banku will get thick and stiff as you continue to stir. Make sure to vigorously knead with the wooden stick against the pot. Add water to soften your mixture when needed. This process should take about 15 to 20 minutes. Form the banku into serving sized balls:
  • 4FRIED FISH: Clean the fish and remove the gills and fins
  • 5Depends on the type of fish you are using i cut mine in 3 pieces. Add the salt, maggi cube and the ginger garlic paste. marinade it and let it rest for at least 20 minutes.
  • 6Heat the oil and fry the fish till golden color.
  • 7FRESH PEPPER: In a blender add the scotch bonnet Pepper, tomato, onion and the salt. Blend everything together
  • 8Serve your banku like above. ( You can add finely sliced onion and tomato to it). Enjoy
