Meat pie or fish pie is very popular in Ghana and most of the African countries. It is mostly sold on the street of Ghana. People love it because of it's rich and crusty.

Ingredients

  • 1 kg all purpose flour
  • 500g butter
  • 100ml cold water
  • 1 1/2 tsp salt
  • 1 onion finely chopped
  • 1/2 shrimp maggi cube
  • 1 tbsp nutmeg
  • FILLING
  • 1 onion chopped
  • 3 tbsp oil
  • 1/2 shrimp maggi cube
  • 1 can tuna in brine

Directions

  • 1Fry the onions until glaze colour
  • 2Strain the tuna and add it to the onion, fry for 5 minutes
  • 3Then add 1/2 shrimp maggi cube mix and stir for 2 minutes
  • 4Set aside and let it cool.
  • DOUGH
  • 1Preheat the oven on 200C
  • 2In a mixing bowl add the butter to the flour and nutmeg using the fingers, incorporate the butter into the flour.
  • 3Mix the salt with the cold water then add to the dough and knead for 3 minutes.
  • 4On a floured surface, roll out handful of the dough. Dusting the rolling pin and the surface will prevent the dough from sticking on to it.
  • 5Using a soup bowl or a large round cookie cutter, cut the pastry dough into required shapes.
  • 6Add spoonfuls of the filling to the center of round dough. Fold it over and use a fork or the end of the fork or a spoon to crimp the edges. Use the fork to create holes on top of the pie, use any design you prefer. The holes allow steam to emanate from the filling during baking.
  • 7Grease and flour a baking tray or use a baking paper
  • 8Place the pies on the baking tray and brush the surface with evaporated milk or coffee milk. You can use 1 whisk egg if you wish but i prefer milk.
  • 9Bake the pie until it has a golden brown colour on the surface. This will take about 20-30 minutes.
  • 10Remove the pie and let it cool down and serve it with a chilled drink.
