This Recipe is really impressive, but also really easy. It is also easy to remember that you use 1 chicken breast per serving and 1 Tbsp of thai curry paste per serving. Enjoy!
Ingredients
- 2 Tbsp coconut oil, separated
- 4 skinless, chicken breasts, cubed
- 2 large carrots, peeled and sliced
- 1 small head of cauliflower, cut into florets
- 1 red bell pepper, cut into strips
- 1 yellow bell pepper, cut into strips
- 2 large zucchinis, halved and cubed
- 2 red chillies, thinly sliced
- 1 c water
- 1 can coconut milk
- 4 Tbsp thai curry paste
- salt to taste
Directions
- 1Add 1 Tbsp of oil to a large saucepan. Add the chicken and brown. Remove from saucepan.
- 2Add the other Tbsp of oil to the now empty saucepan. Ad the carrots and sauté for a couple of minutes. Add in the other veggies as well, along with the water, coconut milk and curry paste. Bring to a boil and then turn down the heat and simmer for 10 min.
- 3Add in the chicken and simmer for another 10 min.
- 4Serve over rice or have it just as is with some avocado. Enjoy!
