This is a veggie packed breakfast, but super easy to make, especially if you have a large number of breakfast guest, so delicious and versatile. Enjoy! 

Ingredients

  • 1/2 Tbsp olive oil
  • 2 medium zucchini, cubed
  • 1/4 head cauliflower
  • 1/2 medium sweet potato, cubed
  • 1/2 bell pepper
  • 2 streaks bacon, cut up or meat of choice (optional)
  • salt (to taste)
  • pepper (to taste)
  • 1 tsp paprika
  • 2 eggs
  • avocado to serve (optional)

Directions

  • 1Preheat oven to 170'C / 350'F
  • 2Heat oil on medium-high heat in a oven-safe pan. Add the zucchini, cauliflower and sweet potato to the pan and sauté for 2 min. Add the rest of the ingredients, except the eggs and avo.
  • 3Mix the veggies and then make indentations for each egg you are using and slide 1 egg into each little hole.
  • 4Cover the pan with foil and put it in the oven for 15 min. Keep an eye on it though to make sure you only cook it enough for how done you want your egg yolks.
  • 5Alternatively, if you do not have an oven-safe pan, you can follow the same steps, but instead of putting it in the oven, you can keep it on the stove, turn the heat to medium-low and cover with a lid. Again keep an eye on the doneness of the eggs.
  • 6Once done, serve each person hash and an egg. I also like to serve it with avocado, you can also add something like cheese on top. Enjoy!
