I love making stir fries on weeknights when I’m in a pinch. They’re quick, healthy and simple to throw together. Often times, I just use whatever I have on hand.
One of my favorite classic combinations is beef and broccoli in oyster sauce. Making it at home is so so easy; there’s really no excuse for take out. Unless you’re hungover. That’s always a valid excuse for take out.
Ingredients
- ½ lb beef sirloin, sliced in thin strips against the grain
- 1 tsp soy sauce
- 1 tsp mirin
- ½ tsp cornstarch
- 1/8 tsp baking soda
- 1 small head of broccoli, cut into florets
- 2T soy sauce
- 2T oyster sauce
- 1 tsp mirin
- 1 tsp light brown sugar or granulated sugar
- 1 tsp cornstarch
- 1T vegetable oil
- ½ inch ginger, minced
- 1 clove garlic, minced
Directions
- 1In a medium bowl, combine beef, soy, mirin, cornstarch and baking soda. Allow to marinade at room temperature for 15-30 minutes.
- 2In the meantime, bring a large pot of salted water to a boil. In a large bowl , combine cold water and ice cubes for water bath. Add broccoli to pot and parboil for 2-2 ½ minutes; drain and shock in the ice water bath. Drain when cool.
- 3For the sauce, whisk together soy, oyster sauce, mirin and sugar in a small bowl. In a separate bowl, dissolve the cornstarch in 1 teaspoon of water.
- 4Heat oil in a large sauté pan or wok over medium-high to high heat. Add beef and stir fry for 1-2 minutes or until browned on both sides, but not fully cooked through. Add ginger and garlic; sauté 30 seconds. Add broccoli and sauce, and stir to combine. Stir in cornstarch mixture. Boil sauce for 1-3 minutes or until thickened. Serve with steamed jasmine rice.
