Ingredients
- 2, 6oz skin-on salmon fillets (preferably center-cut)
- 1T whole grain mustard
- 1T Dijon mustard
- 2 tsp maple syrup
- 2 tsp extra virgin olive oil, plus more for greasing
- Kosher salt and fresh cracked pepper
- Lemon wedges, for serving
Directions
- 1Preheat oven to 180°C. Bring salmon to room temperature for 30 minutes. Lightly grease a baking sheet with oil. In a small bowl, whisk together mustards, syrup and oil. Pat salmon dry. Season well with salt and pepper on the skin side; season lightly on the opposite side. Lay salmon skin side down on the prepared baking sheet. Rub the top with the mustard mixture. Bake for 8-10 minutes or until cooked to desired doneness. If desired, transfer under the broiler for the last 2-4 minutes of cooking for a more well-browned crust (not depicted here). Remove skin before serving, if desired. Serve with lemon.
