So you must be thinking: "That's not healthy" But, it is simple and delicious, besides, I believe it is a healthy thing to indulge once in a while. Don't you agree?
My great Aunt taught me how to make this gastronomic indulgence when I was just a girl. I used to sit at the kitchen counter and watch her make the caramel, "bano de maria", and setting the oven to bake the flan. I have been enjoying this recipe ever since. Flan is a common dessert in Spanish menus.
Flan is great for dessert or coffee break.
You can change the essential flavor by changing the extracts and milks: Almond, Coconut, or Vanilla. This recipe is Vanilla Flavor.

Ingredients
- (5) Eggs, (8 ounces) Creme Cheese, (1 teaspoon) Vanilla Extract
- (11 ounces/Can) Evaporated Milk and (12 ounces/Can) Condensed Milk (Sweetened)
- 3/4 cup granulated sugar for the caramel
- Kitchen Tools
- Electric Blender
- Glass Mold (to bake the flan)
- Wooden Spatula (to stir the caramel)
- Larger Mold (for the bain-marie)
- Non-stick Skillet or Saucepan (to melt the sugar for the caramel)
Directions
- 1Place the eggs, vanilla extract, creme cheese, evaporated milk, and condensed milk in the blender and mix for a minute or less. Do not over mix. All ingredients should be blend in. Set aside. Preheat oven at 350F degrees.
- 2Pour the sugar on the skillet. Turn the heat to high. Watch the sugar melt. Turn the heat to medium high as you slowly stir the caramel until it's all golden color. Do not let burn (it turns a darker brown color) Pour the caramel on the glass mold. It will harden as it cools.
NOTE: Be cautious with the caramel, it is very hot. - 3Once the caramel is hard, the oven is at 350, and the ingredients mix is ready, it is time to set the bain-marie. Simply, pour the flan mix on the cool caramel in the glass mold. Then, place the glass mold inside the larger mold (or pan) Pour warm water inside the larger pan. Water level is about 1 inch deep.
- 4Last, place the bain-marie with the flan mix in the oven for 1 hour. Take out the flan mold and let cool for about 30 minutes before putting it in the fridge.
- 5Serving and Presentation: Once the flan is completely cold (about 2 hours after), place the bottom of the mold in warm water. With a thin knife, carefully scrape the flan from the borders of the mold. Place a tray or plate where you plan to serve the flan on top with the inside facing the top of the flan. Finally, using a swift movement turn the mold upside down to release the flan on the serving tray.
Decorate with fruit, fresh flowers, nuts, etc.
