This recipe is delicious and satisfying! Summer 2021was a lot of fun for me because I visited my daughter's family in Maryland and had the opportunity to cook lunch for them, and they loved it.
To begin, let's make sure there is plenty of eggs, at least one egg per serving. I recommend organic eggs.
The best thing about this recipe is you can get creative with the ingredients by interchanging the ones I suggest with whatever is available in your kitchen.
"Buen Provecho"
Ingredients
- 6-8 organic eggs, beaten with the pinch of salt
- Two large potatoes, peeled and cut in 1
- 1/2 large onion, chopped
- 1 large green bell pepper, thinly sliced
- 6 bacon trips, fried and chopped in small bits
- 6 slices of deli turkey or pork ham
- Corn cooking oil
- Salt to taste
Directions
- 1In a 2" deep, non-stick skillet, fry the potatoes in oil, at medium high. After the potatoes are fully cooked, add the onions and peppers. Watch it as not to over cook or burn.
- 2Add the bacon and ham, spread in a layer.
- 3Pour the beaten egg mixture spreading it so it covers all the ingredients in the same skillet. Turn heat to medium low, cover, and cook slowly for 10-12 minutes or until all the egg is completely cooked. Watch closely as not to let it burn.
