Grilled heads of Little gem lettuce make for a quick and easy summer salad.

Ingredients

  • 2 T finely chopped shallot
  • 1 T balsamic vinegar
  • 1 T Spanish sherry vinegar
  • 6 T olive oil, plus some for brushing the lettuce
  • 6 Little Gem lettuce heads, sliced in half from stem to stern
  • 3 ounces crumbled feta cheese
  • ¼ t crushed red pepper flakes

Directions

  • 1In a small bowl combine shallot and vinegars. Whisk in olive oil and season with salt and pepper to taste.
  • 2Heat grill to medium and lightly oil the grate. Brush the lettuce with a little olive oil and grill for 1 - 2 minutes on either side until lettuce is lightly charred.
  • 3Plate lettuce cut-side up, drizzle with dressing, top with feta cheese and sprinkle with crushed red pepper flakes.
