This Mexican dish is one that can be put together quickly and is wiped out clean quicker than you thought. Loved by kids and grown ups alike, its one healthy breakfast packed with nutrients, calcium from the cheese, Iron from spinach and loaded with proteins from the eggs and chicken which will give you an energy boost to head start your day. This dish can have numerous variations to match your family's taste buds. The veggies are enveloped with cheese into those tortillas. An ideal hide-out to trick the picky- eater kid into devouring it without any complains. So feel free to fill it up with grayed carrots, corn etc etc(do not over load). Quesadilla is basically cheese fillings with meats, veggies etc sandwiched between two tortillas and heated to a nice crisp. I used ready made 8" tortillas, which are easily available at supermarkets. If not available you can make 8" wheat chapatis and use in place of the tortillas.
Here is the recipe for making 3 quesadillas, which will yield 12 slices. Here is a short pictorial guide:
1. In a pan add a tbsp of olive oil, drop in the minced chicken, season with salt and pepper, add 1/2 tsp of ginger garlic paste.
2. Stir and keep mashing and breaking through the minced chicken to ensure that it is evenly seasoned and cooked. Once its cooked and slightly browned, take off heat and keep aside. This mixture will be used to fill in the quasedillas.
3. In a bowl crack up two eggs, sprinkle salt and pepper, add 1/4 cup of sliced spinach. Beat the mixture evenly.
4. Heat the same pan where the minced chicken was stir fried, add a tsp of olive oil, tilt the pan to spread it evenly through. Pour out the egg- spinach mixture in the center of the pan, so that it speads out approx into a tortilla sized circle. Allow it to cook, for about half min.
5. Sprinkle about a tbsp of grated cheese evenly on the egg spread.
6. Place a Tortilla over the egg-cheese spread and press gentle over it so that the molten cheese holds it(about 30 secs).
7. Turn the tortilla egg spread over. Once the tortilla is turned, spread out a generous amount of stir fried chicken mince on the egg spread surface. Sprinkle a tbsp of grated cheese(or more for a more cheesy filling).
8. Place another tortilla over it and press gently so that the molten cheese holds up the tortilla firmly( about 30 secs).
9. Turn over again once the tortilla is crisp and allow the other side also to develop a light golden crisp. Serve hot, with a pizza cutter, slice into quarters and serve with hot sauce or ketchup.

- To make 3 Quesadilla (12 slices)
- Chicken mince- 150 gms
- Spinach- 3/4 cup(thinly sliced)
- Eggs- 6
- Tumeric-3/4 tsp
- Ginger garlic paste- 1/2 tsp
- Tortilla- 6
- Mixed grated cheese(cheddar+mozzarella)-1/2 cup or more as needed.
- Salt to taste
- Black pepper- as per taste for seasoning
- Olive oil- 1 tbsp + 3tsp
