Cucumbers come in many shapes and sizes. They are good for salads, snacks, and juicing! I prefer them fresh, sliced, and seasoned with lemon, salt, and olive oil.
I like to use an electric slicer, like the "Salad Shooter" to get an even thickness.
This easy salad is a cool side for any main dish. I served it with brown rice and grilled chicken.

Ingredients
- Cucumbers (2) 5-6
- Juice of 1/2 Lemon and Olive Oil (2-3 tablespoons)
- Sea Salt & Oregano (or any other favorite spice)
- I/4 Medium Onion (sliced or chopped)
Directions
- 1In a container or deep plate pour olive oil to cover the bottom evenly. Then, add the sliced cucumbers. Spread out evenly.
- 2Sprinkle with salt, and add the oregano, chopped onion, and lemon juice.
- 3Mix all ingredients, cover, and place in the refrigerator for 15-20 minutes before serving.
