It's been a long night and morning!

Easy, delicious, and filling, you can add bacon strips and make it a true Southern recipe with a Spanish

twist: The "tortilla"

Ingredients

  • 1-2 Boiled Potatoes
  • 2 Large Eggs (beaten in a bowl) Set aside.
  • Sea Salt
  • Bacon Strips (optional)
  • 1 Tablespoon Butter

Directions

  • 1Cut the potatoes in 1" cubes, then boil in water with a pinch of salt
    Note: This step can be completed ahead of time. Save the potatoes overnight in the fridge in a covered container. This will save 15 minutes of preparation time.
  • 2In a skillet, melt the butter and add the potatoes moving the potatoes around so they saute in the butter for a minute or two.
  • 3Add the egg mix and let it cook covered for about 3-5 minutes in medium to low heat.
  • 4Serve warm.
    Options: add shredded cheese, sprouts, bacon strips, or all three!
