This is what I eat when I want to add some animal protein to my diet.
I suggest a spinach and avocado side salad.(photo)
Skirt steak is a popular beef cut in Brazil, Argentina, and other countries in south America. They call this steak: "Churrasco".
There is a special green sauce called, "chimichurri" which is made with cilantro and other fresh herbs. You could add that to this recipe.
Ingredients
- 2 - 4 ounces of skirt steak(fat removed) marinated with adobo seasoning
- 1 - 2 soft flour tortilla
- 1 -2 slices of Swiss cheese
- 2 cloves of garlic freshly minced and pinch of sea salt
Directions
- 1Cut up the steak in 1/2 inch strips. Marinate in adobo seasoning, garlic, sea salt, and water for 1/2 hour.
- 2Preheat lightly greased skillet, then, set to medium heat. ADD the steak and stir fry for about 5 minutes. Keep an eye on it until it reaches your preferred level of juiciness: Well done, Medium, Rare, etc.
- 3On a plate, place the tortilla, then one slice of cheese, then the cooked steak, and last, top with another slice of cheese. Make a roll by folding both sides of the tortilla. Use a toothpick to keep the filling inside the wrap.
- 4Last, in the same greased skillet brown both sides of the wrap for a toasted texture. This only takes a minute. Avoid burning the tortilla.
