I had to do some research for the recipe that I share with you today. However, I still don’t know exactly what I’ve baked in the oven. In Italian, we call them “biscotti”, so I guess they’re cookies. Unless you call them biscuits.

They’re crisp, with a vanilla and lemon aftertaste. I baked them in various shapes and I put them together using jam and Nutella.

The recipe has many versions, from which I’ve tried three or four in the last year. I’ll not explain the easiest below, but the one I think works best.

I’ve made the cookies last evening, because I had no photos. Unfortunately, not all of them are decent ones.

I tried to make a small experiment and use some almond flour for a better flavour. However, the result was a dough more difficult to work with and the taste doesn’t change that much to worth the extra work. If you want to try it anyway, all you have to do is substitute a fifth from the quantity of all-purpose flour with the same quantity of almond flour.

Ingredients

  • butter - 300 grams
  • powdered sugar - 200 grams
  • eggs - 1
  • yolks - 2
  • all-purpose flour - 500 grams
  • vanilla flavour
  • lemon zest
  • jam

Directions

  • 1Mix the butter with the powdered sugar. You can do it directly on the working surface or, if you use the food mixer, with the k beater. Keep the mixer on low speed.
  • 2Add the egg, the yolks, and the flavours and continue mixing the composition.
  • 3Fold in the flour. The composition will start forming small breadcrumbs. When they grow too big to be mixed with the k beater, remove them from the bowl and finish working the dough by hand, on a floured surface. Don't overwork the mixture. Once you've formed a soft dough ball, wrap it using stretch film and let it rest in the fridge for at least two hours.
  • 4Lightly flour the working surface and roll the relaxed dough until you reach the thickness of 0.5 cm.
  • 5Shape your cookies using cookie cutters of different sizes. I like to make a smaller shape into the larger one, to obtain a nice view of the filling when I put two cookies together.
  • 6Bake at 180°C (356°F) for 12 - 15 minutes, or until the cookies are golden brown.
  • 7When the cookies are warm, stick them in pairs using, jam marmalade or Nutella.
  • 8Decorate with powdered sugar.
