Very quick and delicious, sugar-free waffle recipe for any occasion.
Ingredients
- 2 c whole wheat flour
- 2 eggs
- 1 3/4 c milk
- 1/2 c applesauce or greek yoghurt
- 4 tsp baking powder
- 1 ripe banana
- 1 Tbsp xylitol or sweetener of choice
- 1/4 tsp salt
- 1 tsp cinnamon
- 1 tsp vanilla extract
Directions
- 1Preheat waffle iron.
- 2Beat eggs until foamy in a large bowl. Then add milk, applesauce (or yoghurt) and vanilla to eggs and whisk.
- 3In separate bowl , combine flour, baking powder, xylitol, salt and cinnamon. Also mash the banana in a separate bowl.
- 4Add flour mix and mashed banana to the egg mix and beat well.
- 5Add more milk if you desire a more loose consistency and spoon batter into waffle iron.
- 6Serve with toppings of choice, but i personally do not think a sweet topping such as maple syrup or honey is necessary, because the waffle is sweet enough. I like to servemy waffle with whipped mascarpone, dark chocolate chips, banana and peanut butter. Enjoy!
