The beautiful weather with wafts of tasty barbeque aroma, snacks, laughter, and chit chats over brewing coffee. Those residing on this side of the world(gulf) can completely relate to this scenario at the moment. This might just be the need of the hour, especially a boon after the lockdown bane, with the star trending word of the year "precautions" of course. I don't know if you too feel the same, but every barbeque get together seems unusually special. Guess we had a "social media overdose" and are craving to just "being human" (Salman Khan would agree) or being just "Social" (drop the media!) for a change. So here is yet another easy barbeque recipe you should try, apart from the Lebanese, and nandos chicken already on the blog. This one has the basic green masala marinade with easily available ingredients. What makes it a little different is the crushed dried lemon powder which I decided to throw in, an impromptu attempt which actually hit the right chords. So here we are....
Dry lemons, easily available at Indian and middle eastern supermarkets.
Ingredients
- Chicken- 1(cut to 6 pieces or as desired) Slit chicken surface slightly.
- Grind to a paste:
- Pepper corns- 1 tbsp
- Ginger- 1 inch
- Garlic-3 cloves
- Cumin seeds- 1 tsp
- Green chilly- 8-9 (as desired)
- Coriander- 1 cup
- Cardamom- 2pods
- Curd- 2 tbsp
- Cream-2tbsp
- Onion powder- 1tbsp
- Oyester sauce- 1 tbsp
- Chat masala powder- 1 tbsp
- Salt- to taste.
- Combine together:
- Kasuri methi- 1 1/2 tsp
- Crushed dry lemon- 2 tsp (more as per liking)
- Ghee/oil- 1 tbsp
- Lemon juice- 1 tbsp
Directions
- 1Grind all the ingredients to a smooth paste. Add Kasuri methi, crushed dry lemon, ghee and lemon juice mixture. Check the marinade and adjust seasoning.
- 2Add the chicken pieces into the mixture and allow it to marinate overnight. The more it's marinated, the merrier! Grill or barbeque and serve with salad or pit bread. Enjoy!
