This recipe has the healthy, satisfying feel of oatmeal combined with the natural sweetness of coconut. The Chia seeds provide edible garnish and added fiber.
- 8 grams black chia seeds
- 1 cup of oatmel oats
- Pure coconut extract to taste (approximately 1/2 teaspoon)
- Pinch of cinnamon
- 1 1/2 cup of almond or coconut milk
- 1/4 cup of raisins
- 1In a saucepan at high heat, mix the milk, oatmeal, cinnamon, and coconut extract, stirring gently. Avoid from burning the oatmeal by watching the temperature. If necessary, turn heat to medium high. Keep stirring until the oats look soft (cooked)
- 2Serve on a plate. Sprinkle with the chia seeds and top with raisins.
