This is a simple, healthy snack that requires no cooking.
- 2 servings of organic beet chips
- 1 can of fried pinto beans (softened)
- 1 small sweet pimento (cut up in small pieces; save 2 tbs of the juice)
- 1In a small bowl, soften to a creamy texture the pinto beans adding the pimento juice (use a mixer or fork) It should make a creamy texture similar to melted cheese. Then, take teaspoonful amounts and cover each beet chip as illustrated in the photo.
