An easy, fresh and healthy summer gazpacho recipe full of tomato, cucumber and onion goodness. The base ingredients are tomatoes, vibrant red and almost overripe tomato, with full of aromas. 

Remember that olive oil is mandatory. It helps emulsify the blend, gives some smooth texture and enhances the fragrances.

Gaspachio

An easy, fresh and healthy summer gazpacho recipe:

Ingredients

  • 2 Large tomatoes, diced
  • 100 ml Tomato juice
  • 1 Cucumber, diced
  • 1 Small onion, chopped
  • 2 tbsp Olive oil
  • 2 tbsp Lemon juice
  • 1 tbsp Balsamic vinegar
  • Parsley, fresh, chopped
  • Cilantro, fresh, chopped
  • Basil, dried
  • Cumin, ground
  • 1 clove of garlic
  • Salt and black pepper

Directions

  • 1In a large bowl, mix the tomatoes, tomato juice, onion, cucumber, olive oil, lemon juice, balsamic vinegar, cilantro parsley. Season with salt, pepper, cumin.
  • 2Place the mixture in the refrigerator and let chill, covered, for at least 2 hours.
  • 3Serve cold. Garnished with the cucumber, tomatoes, avocado, basil and a drizzle of olive oil.
